Conche Operators operate the conche machine to heat and agitate refined chocolate mass with cocoa butter to enrich the colour, flavour, and texture. They also pump the specified amount of chocolate mixture into the steam-heated stationary tank or rotary drums. They are responsible for metering out ingredients such as cocoa butter or flavorings, turning steam valves, and adjusting the thermostat to heat the contents of the tank or drum to the specified temperature. They also have to push the level to start agitators and take the plunge to rotate the drum. In addition to this, as a part of their job profile, they are also expected to observe and taste the mixtures to evaluate their conformity to standards and send over the samples to the laboratory for further analysis. Moreover, they adjust temperatures, the agitation speed, and timing cycle, and add ingredients such as cocoa butter and lecithin, according to laboratory findings.
